Edamame Quinoa Salad

Healthy, easy, and great for lunch the next day.

Type: Side or entree


  • 16 oz shelled, edamame
  • 1 1/4 cup corn
  • 1 1/2 cup cooked quinoa
  • 2 green onions sliced
  • 1 red sweet bell pepper diced
  • 2 tablespoons minced fresh cilantro
  • 2 tablespoons olive oil
  • 1 1/2 tablespoons freshly squeezed lemon juice
  • 1 1/2 tablespoons freshly squeezed lime juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon freshly ground black pepper
  • Dash cayenne


  1. In a large bowl combine the edamame, corn, quinoa, green onion, red pepper, and cilantro
  2. In a small bowl, whisk together the olive oil, lemon juice, lime juice, salt, chili powder, black pepper, thyme and cayenne until well combined
  3. Drizzle over the salad and toss to coat
  4. Cover and chill for 30 minutes to an hour
